Meat Lovers Biscuits
- Yields 6 dozen
- 1 pound lean ground beef (could be any lean ground meat)
- 1½ cups rolled oats
- 2 eggs, beaten
- 1½ cups water
- 3 cups organic coconut flour (or any gluten free flour)
Preheat oven to 170°C (325°F). Mix together the meat and eggs in a bowl, using your hands if necessary to mix completely. In a separate bowl, mix the flour with the oats, then gradually mix in the meat-egg mixture with your hands until mixed thoroughly. Add the water to form a sticky dough. Knead dough on a lightly floured surface for 3 minutes. Roll dough to ¼ inch thickness, using more flour if necessary and cut into desired shapes with a cookie cutter. Use a greased cookie sheet and bake for 80 minutes. Allow to cool in the oven for several hours, and then store at room temperature for up to four weeks.
